What is extra virgin olive oil?
The extra virgin olive oil available from iloveaceite.com is obtained from the fruit of the olive tree (Olea europea, L). The varieties of olive are 'Picual' and 'Royal'. These are collected by mechanical means to ensure that no deterioration of the oil occurs during its extraction. Our process ensures that the oil retains the full flavor, aroma and characteristics of the fruit from which it derives. It´s 100% olive juice.
Characteristically the extra virgin olive oil is of a yellowish green colour with an intense, fruity aroma of fresh green grass. It has the sweet smell of "alloza" and the flavor of fresh fruit (apple, almond and fig tree).
Oil derived from the 'Royal' variety is of very high value and its main organoleptic property is a mix of fruitiness and sweet aroma.
The extra virgin olive oil, produced under the Denomination of Origin "Sierra de Cazorla" is of the 'Picual' and 'Royal' variety. The acidic properties are of less than 0.4% and 0.6% respectively, rich in vitamins A, D, E and K. It has a high content of monounsaturated fats and natural antioxidants; an organoleptic assessment that ensures an excellent quality oil.
